What is it about Sunday nights that make me want to browse Pinterest until I find some mouth watering picture then convince my husband that we should try it? I tell you, this is a regular occurrence, and yesterday was no exception. This pancake recipe was modified from French Press, and it is a yummy way to put a new spin on the classic blueberry pancake! They are definitely more dense then regular pancakes, but putting the yogurt in there definitely adds to the flavor. Give it a try and let me know what you think of them!
Ingredients
- 1 1/4 cup of AP flour
- 3 tbsp sugar
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tbsp melted butter
- 1 egg
- 1 tsp vanilla
- 1/2 cup milk
- 1 cup of Greek yogurt ( I used Vanilla)
- 1/2 – 1 cup of blueberries
Instructions
- heat griddle or skillet over med- low {275 degrees}
- combine all of the dry ingredients
- whisk together the milk and the yogurt,{ making sure that is it smooth and without lumps}
- pour over the dry ingredients, and stir in the melted butter and the egg
- mix just until everything is incorporated
- lightly butter the griddle or skillet
- pour 1/3 cup of batter per pancake
- sprinkle a few berries over the top
- cook 6 minutes per side
- serve with powdered sugar, syrup, and additional berries
