Blueberry Pancakes (with Greek Yogurt)

What is it about Sunday nights that make me want to browse Pinterest until I find some mouth watering picture then convince my husband that we should try it? I tell you, this is a regular occurrence, and yesterday was no exception. This pancake recipe was modified from French Press, and it is a yummy way to put a new spin on the classic blueberry pancake! They are definitely more dense then regular pancakes, but putting the yogurt in there definitely adds to the flavor. Give it a try and let me know what you think of them!

Ingredients

  • 1 1/4 cup of AP flour
  • 3 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp melted butter
  • 1 egg
  • 1 tsp vanilla
  • 1/2 cup milk
  • 1 cup of Greek yogurt ( I used Vanilla)
  • 1/2 – 1 cup of blueberries

Instructions

  • heat griddle or skillet over med- low {275 degrees}
  • combine all of the dry ingredients
  • whisk together the milk and the yogurt,{ making sure that is it smooth and without lumps}
  • pour over the dry ingredients, and stir in the melted butter and the egg
  • mix just until everything is incorporated
  • lightly butter the griddle or skillet
  • pour 1/3 cup of batter per pancake
  • sprinkle a few berries over the top
  • cook 6 minutes per side
  • serve with powdered sugar, syrup, and additional berries
