If you are looking for a (half) healthy dessert to make this weekend, look no further! This is a super easy and delicious recipe, just in time for Spring! If you like Rice Krispies (who doesn’t), and fruit dip you will absolutely love this dessert! Give it a try this weekend, and let me know if you love it as much as I do!
Ingredients:
5 cups Rice Krispie cereal
1 bag of mini marshmallows
4-5 Tbs butter or margarine
250 g light cream cheese
3/4 tub Cool Whip
Assorted Fruits (I used blueberries, strawberries, and kiwi)
Step 1: Make the Rice Krispies by melting the butter and marshmallows in a microwavable bowl. Once fully melted add the Rice Krispies cereal and mix well. Pour mixture into a buttered baking dish and press down. Allow Rice Krispies to set for roughly 30 minutes before proceeding.
Step 2: To make the cream topping, simply mix the light cream cheese and Cool Whip together and chill.
Step 3: Once everything has been chilled for roughly 30 minutes, you can remove them from the fridge and evenly spread the cream topping on the Rice Kripies base.
Step 4: Take your assorted fruits and spread on top!
And voila! It is as simple as that! Cut into squares and enjoy!
